Semi-homemade Turkey Divan Casserole


So, in my family we always make WAY too much at Thanksgiving. This includes too much turkey. This recipe is one of my favorite ways to use up some of those leftovers.

The measurements I've given are a complete guess. I just threw stuff in as I went. :)

Things you'll need:

Cooked turkey, cubed (sub with chicken if ya want)
4 to 6 cups cooked rice
Broccoli
2 cans cream of chicken soup
1/4 cup mayo
1/2 cup milk
onion flakes, to taste
salt and pepper, to taste
grated cheddar cheese

First, preheat your oven to 350°F.

Then, find the most unappetizing colored bowl in the kitchen and use it to add your chopped turkey.



Then do the same to the broccoli.

Actually, the bowl is optional. I just needed something to throw the stuff in while I was chopping. :P



In another bowl mix the cream of chicken, milk, onions and mayo. Add some salt and pepper.






Grate your cheese, if you haven't already.



Add rice to a 9x13" dish.



Cover with most of the soup mix, and stir it lightly.



Add your turkey and broccoli.



This step is completely optional: Add the rest of the soup mix.



Add the cheese.



Cover with aluminum foil and bake.

I baked in a convection oven for 40 minutes. In a regular oven I'd go 40 minutes to an hour. :)

Voila! Simple, right? :)
